After eating chicken piccata in many restaurants and finding many that were 'greasy,' I came up with this recipe through much trial and error. It has wonderful flavor and is even better the next day! I like to serve it over angel hair pasta or linguine

Ingredients

- 3/4 cup all-purpose flour 
- 1/8 teaspoon garlic powder 
- 1/4 teaspoon salt 
- 1/8 teaspoon black pepper 
- 1/2 teaspoon Italian seasoning 
- 4 skinless, boneless chicken breast halves, pounded 
- 1/2 inch thick and cut into thirds 
- 2 tablespoons olive oil 1 clove garlic, minced
- 1 onion, minced 
- 1/2 cup white wine 
- 1 (14.5 ounce) can chicken broth 
- 2 tablespoons lemon juice 
- 1 (13.75 ounce) can artichoke hearts, drained and chopped, liquid reserved 
- 1/4 cup capers, with liquid 
- 2 tablespoons butter

Directions

- Mix together the flour, garlic powder, salt, pepper, and Italian seasoning on a plate. One by one, dredge the chicken pieces lightly in the prepared flour mixture.
- Heat the olive oil in a large skillet over medium-high heat. Cook the chicken pieces for 2 minutes per side, or until nicely browned. Remove from the skillet and set aside.
- Using the same skillet, cook and stir the garlic and onion until translucent, about 5 minutes. Pour the white wine into the skillet, turn the heat to high, and cook until the wine reduces by half, 4 to 5 minutes. Add the chicken broth, lemon juice, artichoke hearts, reserved artichoke liquid, and browned chicken to the skillet. Reduce the heat to medium and cook until the sauce thickens, about 20 minutes. Stir in the capers and butter.

- 1 1/2 cups all-purpose flour 
- 1 teaspoon baking soda 
- 1 teaspoon baking powder

- 3 bananas, mashed 
- 3/4 cup white sugar
- 1 egg, lightly beaten 
- 1/3 cup butter, melted 
- 1/3 cup packed brown sugar 
- 2 tablespoons all-purpose flour 
- 1/8 teaspoon ground cinnamon 
- 1 tablespoon butter

 Directions

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
- In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups
- In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
- Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Ingredients

- 1 cup packed brown sugar 
- 1/3 cup butter, melted 
- 2 tablespoons light corn syrup 
- 1/3 cup chopped pecans 
- 12 (3/4 inch thick) slices French bread 
- 1 teaspoon grated orange zest 
- 1 cup fresh orange juice
- 1/2 cup 2% milk 
- 3 tablespoons white sugar 
- 1 teaspoon ground cinnamon 
- 1 teaspoon vanilla extract 
- 3 egg whites 
- 2 eggs 
- 1 tablespoon confectioners' sugar for dusting

Directions

- In a small bowl, stir together the brown sugar, melted butter, and corn syrup. Pour into a greased 9x13 inch baking dish, and spread evenly. Sprinkle pecans over the sugar mixture. Arrange the bread slices in the bottom of the dish so they are in a snug single layer.
- In a medium bowl, whisk together the orange zest, orange juice, milk, sugar, cinnamon, vanilla, egg whites, and eggs. Pour this mixture over the bread, pressing on the bread slices to help absorb the liquid. Cover and refrigerate for at least one hour, or overnight.
- Preheat the oven to 350 degrees F (175 degrees C ). Remove the cover from the baking dish, and let stand for 20 minutes at room temperature.
- Bake for 35 minutes in the preheated oven, until golden brown. Dust with confectioners' sugar before serving.

Ingredients

- 2 skinless, boneless chicken breast halves 
- 1 (1.27 ounce) packet dry fajita seasoning, divided 
- 1 tablespoon vegetable oil 
- 1 (15 ounce) can black beans, rinsed and drained 
- 1 (11 ounce) can Mexican-style corn
- 1/2 cup salsa 
- 1 (10 ounce) package mixed salad greens 
- 1 onion, chopped 
- 1 tomato, cut into wedges

Directions

- Rub chicken evenly with 1/2 the fajita seasoning. Heat the oil in a skillet over medium heat, and cook the chicken 8 minutes on each side, or until juices run clear; set aside.
- In a large saucepan, mix beans, corn, salsa and other 1/2 of fajita seasoning. Heat over medium heat until warm.
- Prepare the salad by tossing the greens, onion and tomato. Top salad with chicken and dress with the bean and corn mixture.

A delicious pasta and chicken dish with garlic, sun-dried tomatoes and fresh basil. Use the dry packaged sun-dried tomatoes instead of the tomatoes packed in olive oil. The sauce can be kept, covered, for one day in the refrigerator; heat again over low heat. Try it with some crusty bread if desired.

Ingredients

- 1 tablespoon butter 
- 2 cloves garlic, minced 
- 1/2 cup sun-dried tomatoes, chopped 
- 1 cup chicken broth, divided 
- 1 cup heavy cream
- 1 pound skinless, boneless chicken breast halves 
- salt and pepper to taste 
- 2 tablespoons vegetable oil 
- 2 tablespoons chopped fresh basil 
- 8 ounces dry fettuccini pasta

Directions

- In a large saucepan over low heat, melt butter; add garlic and cook for 30 seconds. Add the tomatoes and 3/4 cup of the chicken broth; increase to medium heat and bring to a boil. Reduce heat and simmer, uncovered, for about 10 minutes or until the tomatoes are tender. Add the cream and bring to a boil; stirring. Simmer over medium heat until the sauce is thick enough to coat the back of a spoon
- Sprinkle the chicken with salt and pepper on both sides. In a large skillet over medium heat, warm oil and saute chicken. Press on chicken occasionally with a slotted spatula. Cook for about 4 minutes per side or until the meat feels springy and is no longer pink inside. Transfer to a board; cover and keep warm. Discard the fat from the skillet.
- In the same skillet, over medium heat, bring 1/4 cup chicken broth to a boil; stirring the pan juices. Reduce slightly and add to the cream sauce; stir in basil and adjust seasonings to taste.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; drain, transfer to a bowl and toss with 3 to 4 tablespoons of the sauce.
- Cut each chicken breast into 2 to 3 diagonal slices. Reheat the sauce gently if needed. Transfer the pasta to serving plates; top with chicken and coat with the cream sauce; serve.
