Ingredients

- 1/4 cup butter
- 2/3 cup dark brown sugar
- 3 1/2 tablespoons rum
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 3 bananas, peeled and sliced lengthwise and crosswise
- 1/4 cup coarsely chopped walnuts
- 1 pint vanilla ice cream

Directions

In a large, deep skillet over medium heat, melt butter. Stir in sugar, rum,
vanilla and cinnamon. When mixture begins to bubble, place bananas and walnuts in pan. Cook until bananas are hot,
1 to 2 minutes. Serve at once over vanilla ice cream.

Ingredients

- cooking spray
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes with lime juice and cilantro
- 1 (8.75 ounce) can whole kernel sweet corn, drained
- 1 (4.5 ounce) can chopped green chiles, drained
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon minced garlic
- 1/2 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 6 flour tortillas -
- 2 cups shredded Cheddar cheese

Directions

- Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot
skillet until beef is completely browned, 5 to 7 minutes; drain and discard grease.
- Stir tomato sauce, black beans, diced tomatoes with lime juice and cilantro, corn, and chopped green
chiles into the ground beef mixture; season with chili powder, cumin, garlic, oregano, and red pepper flakes.
Reduce heat to low and cook mixture at a simmer for 5 minutes.
- Spread about 1/2 cup beef mixture into the bottom of the prepared baking dish; top with 3 tortillas,
overlapping as needed. Spread another 1/2 cup beef mixture over the tortillas. Sprinkle 1 cup Cheddar cheese over beef.
Finish with layers of remaining tortillas, beef mixture, and Cheddar cheese, respectively.
- Bake in preheated oven until heated throughout and the cheese is melted, about 15 minutes. Cool 5 minutes before serving.

Directions

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat; cook and stir bacon and onion until bacon is evenly browned, about 10 minutes. Drain. Transfer bacon and onion to a large bowl. Stir in potatoes, eggs, 
Cheddar cheese, cottage cheese, and Swiss cheese. Pour mixture into prepared baking dish.
- Bake in preheated oven until eggs are set and cheese is melted, 45 to 50 minutes. Let stand 10 minutes before cutting and serving.

Ingredients

- 2 (10.75 ounce) cans condensed cream of mushroom soup 
- 1 (1 ounce) package dry onion soup mix
- 1 1/4 cups water 
- 5 1/2 pounds pot roast

Directions

- In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.
- Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.

- 4 (4 ounce) fillets salmon

Directions

- Preheat oven to 400 degrees F (200 degrees C). Line a shallow baking pan with aluminum foil.
- Place salmon skin-side down on foil. Spread a thin layer of mustard on the top of each fillet, and season with salt and pepper. Top with bread crumbs, then drizzle with melted butter.

- 1 tablespoon cornstarch 
- 1 tablespoon cold water 
- 1/2 cup white sugar
- 1/2 cup soy sauce 
- 1/4 cup cider vinegar
- 1 clove garlic, minced 
- 1/2 teaspoon ground ginger 
- 1/4 teaspoon ground black pepper 
- 12 skinless chicken thighs

Directions

- In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger 
and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
- Preheat oven to 425 degrees F (220 degrees C).
- Place chicken pieces in a lightly greased 9x13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.
- Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, 
until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.

This is a delicious recipe for ham and potato soup that a friend gave to me. 
It is very easy and the great thing about it is that you can add additional ingredients, 
more ham, potatoes, etc and it still turns out great

Ingredients

- 3 1/2 cups peeled and diced potatoes 
- 1/3 cup diced celery 
- 1/3 cup finely chopped onion 
- 3/4 cup diced cooked ham 
- 3 1/4 cups water
- 2 tablespoons chicken bouillon granules
- 1/2 teaspoon salt, or to taste 
- 1 teaspoon ground white or black pepper, or to taste 
- 5 tablespoons butter 
- 5 tablespoons all-purpose flour 
- 2 cups milk

Directions

- Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, 
then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, s
alt and pepper.
- In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, 
stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added.
 Continue stirring over medium-low heat until thick, 4 to 5 minutes.
- Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

Ingredients

- 2 kiwis, peeled and diced 
- 2 Golden Delicious apples - peeled, cored and diced 
- 8 ounces raspberries 
- 1 pound strawberries 
- 2 tablespoons white sugar
- 1 tablespoon brown sugar 
- 3 tablespoons fruit preserves, any flavor 
- 10 (10 inch) flour tortillas
- butter flavored cooking spray 
- 2 tablespoons cinnamon sugar

Directions

- In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, 
brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Coat one side of each flour tortilla with butter flavored cooking spray. 
Cut into wedges and arrange in a single layer on a large baking sheet. 
Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
- Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. 
Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

Directions

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish with cooking spray.
- Stir ground beef, onion, oats, Cheddar cheese, milk, egg, and salt together in a bowl; mix well.
 Divide meat mixture into 8 equal portions and form each into a loaf shape. Place loaves in prepared baking dish.
- Stir ketchup, brown sugar, and mustard together in a bowl until smooth. Spread ketchup mixture over meat loaves.
- Bake in the preheated oven until no longer pink in the center, about 40 minutes.

An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- 8 strips bacon

- 1/4 cup packed brown sugar 
- 1/2 cup shredded Colby-Monterey Jack cheese

Directions

- Sprinkle chicken with salt and lemon-pepper.
- Heat oil in a large skillet over medium heat; cook the chicken breasts in hot oil until no longer pink in the center 
and the juices run clear, 13 to 15 minutes. An instant-read thermometer inserted into the center should 
read at least 165 degrees F (74 degrees C). Remove and keep warm.
- Place bacon in large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 
about 10 minutes. Drain bacon slices on paper towels; reserve 2 tablespoons drippings. 
Cook and stir onion and brown sugar in reserved drippings until onion is golden, about 5 minutes.

6 potatoes 
1 cup vegetable oil 
8 ounces shredded Cheddar cheese
1/8 cup bacon bits 
1 (16 ounce) container sour 

Directions

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking pan.
- Pierce potatoes with a fork. Microwave the potatoes on high until they are soft; approximately 10 to 12 minutes.
- Cut the potatoes in half vertically. Scoop the inside out of the potatoes, until 1/4 inch of the potato shell remains.
- Heat oil to 365 degrees F (180 degrees C) in a deep fryer or a deep saucepan. Place the potatoes in hot oil, fry for 5 minutes.
 Drain potatoes on paper towels.
- Fill the potato shells with cheese and bacon bits. Arrange them in the prepared baking pan.
- Bake for 7 minutes, or until the cheese is melted. Serve hot with sour cream.

A very simple and easy marinade that makes your shrimp so yummy you don't even need cocktail sauce! Don't let the cayenne pepper scare you, you don't even taste it. My 2 and 4 year-olds love it and eat more shrimp than their parents! It is also a big hit with company, and easy to prepare. I make this with frozen or fresh shrimp and use my indoor electric grill if the weather is not good for outside grilling. Try it with a salad, baked potato, and garlic bread. You will not be disappointed!!!

Ingredients

- 3 cloves garlic, minced 
- 1/3 cup olive oil 
- 1/4 cup tomato sauce 
- 2 tablespoons red wine vinegar 
- 2 tablespoons chopped fresh basil
- 1/2 teaspoon salt 
- 1/4 teaspoon cayenne pepper 
- 2 pounds fresh shrimp, peeled and deveined
- skewers

Directions

- In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. 
Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, 
and refrigerate for 30 minutes to 1 hour, stirring once or twice.
- Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
- Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.
